Abstract
The article deals with the analysis of the termal degradation of the palm oil heated and maintained at a temperature adjusted between 140 ºC and 160 ºC, during 90 min, by Raman spectroscopy in the wavenumber range from 800 cm-1 to 1800 cm-1. The alterations were identified in the peaks of β-carotene, suggesting strong degradation after 90 min of heating.
